Tasting Note
Bright sour cherry, raspberry and plum with strawberry and forest-floor notes. Hints of leather, smoke and toasted sesame; fresh acidity, supple yet present tannins and a persistent, spicy finish.

Duck breast, mushroom risotto, soft cheeses (brie), roasted pork, grilled tuna; Asian: miso-glazed salmon, teriyaki chicken, shiitake ramen, Korean BBQ (pork/beef).

Production Method
Hand-harvested Pinot Noir fermented in small open vats with selected yeasts; matured ~14 months in French oak barrels and oak foudres (mix of neutral and toasted oak).
