Tasting Note
Concentrated ruby with aromas of plum, cassis, blueberry, cedar, mocha and smoke. Full-bodied, ripe dark-fruit core, spice and firm rounded tannins, with a persistent, elegant finish.

Food Pairing
Western: grilled steak, roast lamb, venison, mature hard cheeses. Asian: Korean BBQ (galbi), Chinese red-braised beef, spicy Sichuan beef, Japanese teriyaki or yakiniku.

Production Method
Hand-harvested fruit; fermented in stainless steel with controlled temperature; aged approximately 17 months in oak barrels, finished in tank before bottling.
