Tasting Note

Amber-tinged mahogany; complex tertiary aromas of leather, olive/tapenade, dried fruit and tobacco. Savory, warm, with polished tannins, lively acidity and long, slightly iodined finish.


Food Pairing

Roast lamb, aged Manchego and cured meats; beef stews, game, duck confit; Asian: Peking duck, char siu/hoisin pork, Korean BBQ (galbi), braised beef dishes with soy-based sauces.


Production Method

Short original fermentation, long cellar ageing: rested in deposito, then matured several years in oak with regular racking, bottled after extended barrel and bottle ageing (embottled 1977).
