Tasting Note
Bright ruby; red and black berries, dried myrtle, pepper, spice, subtle vanilla and smoky notes. Medium‑full, supple tannins and a long, savory finish with cocoa and forest floor hints.

Food Pairing
Western: roast lamb, magret de canard, grilled pork, aged sheep/sheese, wild boar. Asian: Peking duck, teriyaki beef, char siu, Korean bulgogi, richer Sichuan dishes.

Production Method
Hand-sorted, fermented in concrete at ~28°C with ~15 days maceration; aged ~18 months (c.12 months in mixed oak barrels).

Family estate near Mezzavia (Comte Peraldi/De Poix). Granitic soils; vineyards replanted from 1965; long local history.
