Tasting Note
Medium-intense garnet. Aromas of cherry, damson and red berries with cinnamon and subtle mint/balsamic hints. Medium-bodied, supple and elegant with velvety tannins, fresh acidity and discreet oak spice; persistent, savory finish.

Western: roast duck, seared duck with plum glaze, roast partridge, veal escalopes, charcuterie, mushroom risotto, pork or roasted red meats. Asian: Peking/hoisin duck, ginger-seared veal, teriyaki or miso-glazed fish, char siu pork, umami noodle dishes and dishes with soy/ginger sauces.
Production Method
Grapes destemmed, brief cold maceration; fermentation at ~25°C for about 14 days; malolactic in wood. Aged 12 months (2/3 in 35 hl casks, 1/3 in barriques) then 12 months in bottle.
