Tasting Note
Dense dark ruby with cassis, black cherry, leather, tobacco and cedar; rich, full-bodied, opulent fruit with spicy oak, polished tannins and a long balsamic finish.

Food Pairing
Western: grilled ribeye, braised short ribs, pappardelle al ragù, aged pecorino. Asian: Korean BBQ (bulgogi), char siu or Cantonese roast pork, hoisin/soy-glazed duck, spicy Sichuan beef.

Production Method
Certified organic grapes; fermented in stainless/controlled vessels and aged ~18 months in French oak barriques before bottling.
