Tasting Note

Fine, persistent mousse; aromas of red cherry, wild strawberry, citrus zest and brioche with chalky minerality. Clean, focused palate of orchard fruit, saline minerality and subtle autolytic toast, brisk acidity and a long, precise finish.


Food Pairing

Western: oysters, caviar, smoked salmon, seared scallops, roast chicken, creamy foie gras, soft cheeses. Asian: sushi and sashimi, tempura, dim sum, Peking duck, lightly spiced Thai salads.

Single‑vineyard monopole fruit (hand‑harvested); traditional method (secondary fermentation in bottle); extended lees ageing and low dosage (Extra‑Brut/Brut Nature style); minimal intervention.

Made by Jérôme Coessens from the family Largillier monopole (≈3.3 ha) planted to old‑vine Pinot Noir on Kimmeridgian marl; Coessens began bottling under his name in 2006 with a Burgundian, parcellaire approach.
