Tasting Note
Pale salmon pink with aromas of strawberry, cranberry, peach and subtle floral/umami notes. Crisp, lively acidity, saline minerality and a gentle lees-driven mouthfeel with a persistent, refreshing finish.

Food Pairing
Western: tomato-caprese, grilled prawns, roast chicken, light charcuterie, crab cakes. Asian: sushi/sashimi, tempura, yakitori, tom yum goong, sweet-and-sour pork, seafood fried rice.

Production Method
Long, cool carbonic maceration of whole clusters, gentle pressing, fermentation in selected oak barrels and stainless tanks, followed by lees aging; bottled with minimal filtration.
