Tasting Note
Aromatic quince, pear and stone-fruit with honey and lemon; vibrant acidity, saline/umami depth and toasted oak, finishing long and savory.

Production Method
Whole-bunch press; juice settled 12 hours; fermented with wild yeasts in small stainless and 500L French oak at ~17°C; aged on lees eight months with natural MLF; minimal sulphites; unfiltered.
