Tasting Note
Crisp, flinty and aromatic white with pear, lemongrass, citrus peel and subtle herbal notes. Light-bodied, dry, fresh acidity and delicate stone-fruit flavors, finishing clean with a restrained mineral-laced aftertaste.
Food Pairing
Western: poached or grilled white fish, shellfish, roast chicken, salads, goat/soft cheeses. Asian: sushi/sashimi, tempura, steamed fish with soy/ginger, yakitori (light), citrusy Thai or Vietnamese dishes.
Production Method
Blend of varieties; fermented mainly with native (wild) yeasts ~1 month, some co-fermentation; aged ~3 months in stainless-steel tanks; bottled March 2022.
Vineyard Info
Coco Farm & Winery (Tochigi) began as Kokoromi Gakuen’s vineyard project; the winery is a social-enterprise producer that farms without herbicides/chemical fertilizers and sources grapes from Hokkaido, Yamagata and Nagano.
