Tasting Note
Copper-amber colour. Aromas of baked apple, apricot, mandarin, black tea, cinnamon, fig and walnut. Robust palate with ripe fruit, spice, soft phenolic astringency and supple acidity, lingering umami.

Western: roasted or stewed chicken, prosciutto & peach, smoked salmon with cream cheese, strong/washed-rind cheeses. Asian: oden, grilled eel (kabayaki), mapo tofu, charcoal-grilled yakitori, rich seafood (crab, mackerel).
Production Method
Skin-contact (fermented on skins) with wild yeast; destemmed fermentation in tanks/jars (long maceration) and short stainless-ferment batches; pressed, ~60% barrel/40% stainless aging 7–10 months; bottled unfined/unfiltered.
