Crisp, mineral-driven Chardonnay: lime and Meyer lemon, white peach and nectarine, saline sea-spray, crushed stone and almond skin, with delicate creaminess and a long, saline-tinged finish.
Food Pairing
Western: oysters, grilled scallops, roast chicken, mushroom risotto, creamy seafood pasta. Asian: sashimi/sushi, tempura, steamed fish with ginger & scallion, miso-glazed cod, light Chinese roast chicken.
Production Method
Native-yeast fermentation and low-intervention winemaking; aged primarily in neutral/older French oak with minimal new oak to preserve brightness and minerality.
