Tasting Note
Pale salmon pink with wild strawberry, cherry and citrus, brioche and pastry notes, white-pepper spice and chalky minerality. Full-bodied, bright acidity and a dry, chalky finish.

Food Pairing
Western: smoked salmon, oysters, roast chicken, creamy cheeses. Asian: sushi/sashimi, tempura, spicy Thai prawn salad, Cantonese roast pork.

Production Method
Méthode Traditionelle (Méthode Britannique) with secondary bottle fermentation; ~2½ years on lees; blended with 1–2 years reserve wines; dosage 4–6 g/L.
