Tasting Note
Pale gold with fine bubbles; crisp green apple, lemon-curd and honeydew melon notes, subtle brioche and toasted bread complexity, layered texture and a creamy, focused finish.

Oysters, crab and other shellfish; smoked salmon, roast chicken, creamy cheeses; sushi, sashimi, tempura, prawn dumplings, and light Thai seafood dishes.

Production Method
Méthode traditionnelle (bottle-fermented), blended with 2–3 years reserve wines, lees-aged 2½–3 years, dosage c.4–6 g/L, further bottle ageing before release.
