Tasting Note

Open, expressive Pinot Noir: dark cherry, boysenberry and damson jelly with dark chocolate, cold-brew coffee and a crushed mint lift. Silky fine tannins, vibrant acidity and a pure, medium-bodied, gently savoury finish.

Food Pairing

Western: slow-roasted lamb shoulder, beef Wellington, roasted root vegetables, wild mushroom ragù. Asian: hoisin-roasted duck, miso-glazed salmon, char siu pork, shiitake and tofu stir-fry.

Production Method

Mostly de-stemmed to open-top fermenters with ~15% whole-bunch; 5-day cold soak, wild-yeast fermentation, extended maceration, spontaneous malolactic and ~12 months in French oak (30% new).
