Tasting Note
Dark, concentrated Pinot with boysenberry, plum and black cherry, floral lift and subtle spice. Juicy freshness and fine, structured tannins with forest-floor, dark chocolate and blackcurrant notes on a long, elegant finish.
Food Pairing
Western: roast lamb, beef Wellington, mushroom risotto, venison. Asian: miso-glazed salmon, teriyaki or hoisin duck, char siu pork, shiitake mushroom ramen or stir-fried eggplant with soy.
Production Method
Mostly de-stemmed with some whole-bunch fermentation; open-top fermentations, extended maceration and spontaneous malolactic fermentation; aged 12+ months in French oak barrels.
