Tasting Note
Textural, concentrated sauvignon blanc: just-ripe mango, lemon verbena, preserved citrus, white nectarine, salted almond and a gentle smoky minerality, finishing long and focused.

Chinese-style crispy pork belly, spicy Thai or Sichuan dishes, smoked salmon, grilled scallops, tempura oysters, roasted chicken with herbs.
Production Method
Whole-bunch pressed; fermented in French oak barrels with indigenous (wild) yeasts over 4–5 months, then aged 15 months on fine lees in barrel before blending and bottling.
