Tasting Note
Pale straw with fine mousse; green apple, lemon zest, brioche and toasted almond notes. Creamy, toasty palate of citrus, pear and biscuit with a long, nutty finish (fine, persistent bubbles).

Western: oysters, smoked salmon, seared scallops, creamy cheeses, lemon-parmesan canapés. Asian: sushi/sashimi, tempura prawns, Thai seafood salad, miso-glazed black cod, spicy grilled prawns.
Production Method
Méthode traditionnelle (bottle secondary fermentation); base wines fermented in stainless steel and oak, aged on lees ~24 months before disgorgement.
Vineyard Info
Established 1985 by David Hohnen; Pelorus launched 1987. Cloudy Bay is now part of LVMH (Veuve Clicquot family) and sources Wairau Valley estate and contract fruit.
