Tasting Note
Aromas of pear, apricot, beeswax, orange oil and nutmeg. Saline minerality with a creamy, textured mid-palate, medium-full body, citrus zest and ripe tropical notes leading to a long, spicy, saline finish.
Food Pairing
Western: grilled scallops, roasted chicken with herbs, citrus ceviche, creamy goat cheeses. Asian: miso-glazed cod, sashimi, Thai green curry, fish tajine with preserved lemon.
Production Method
Late-harvest Sémillon-led blend (with Sauvignon Gris/Blanc), vinified partly in oak (≈25% new), lees aging and élevage in barrel and vat before blending and bottling.
