Tasting Note
Stone fruit and citrus zest with beeswax, almond and subtle honeyed-botrytis notes; saline minerality, creamy mid-palate, bright acidity and a long, focused finish.

Food Pairing
Western: lobster, grilled scallops, roast chicken with herbs, creamy fish dishes, goat cheese. Asian: sushi/sashimi, steamed ginger-scallion fish, Thai green curry, Chinese steamed lobster or prawn with garlic, Vietnamese grilled prawns.

Production Method
Hand-harvested, late-picked grapes; barrel fermentation and élevage with ~25% new oak; vinified as a dry white despite Barsac's botrytis-prone terroir.
