Tasting Note
Opulent honeyed aromas of beeswax, caramelized pineapple, apricot and citrus peel. Lush, textural palate with confit citrus, white flowers and spice, bright acidity and an exceptionally long, botrytis‑tinged finish.
Food Pairing
Western: foie gras, Roquefort/blue cheese, fruit tarts, crème brûlée. Asian: Peking duck, rich Cantonese roast, sweet‑spicy Thai curry, dim sum with hoisin or plum sauce.
Production Method
Late harvest with strict botrytis selection, gentle vertical pressing, fermentation and extended élevage in oak barrels (part new) for c.18–30 months.
