Tasting Note

Aromatic white with stone fruit, white peach, citrus blossom and honeysuckle, backed by crushed-stone minerality and a honeyed, slightly menthol finish. Medium‑to‑full bodied and silky with bright freshness.

Western: grilled lobster, seared scallops, roasted chicken with herbs, creamy mushroom risotto, aged goat cheese. Asian: miso-glazed cod, tempura, sushi (white fish), lemongrass chicken, mild Thai green curry.


Production Method

Practicing organic/sustainable viticulture; indigenous yeast fermentation, no malolactic; ~7 months ageing largely in stainless steel (≈85–88%) with ~11–12% in new oak barriques.
