Tasting Note

Deep ruby. Ripe blackberry, blueberry and cassis with lavender, clove and black pepper; cocoa, tobacco and a faint smoked finish. Silky, dense palate with layered dark fruit and soft, polished tannins.


Food Pairing

Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar and dark chocolate desserts. Asian: Korean bulgogi or galbi, Cantonese roasted duck or char siu, Sichuan beef, miso-glazed eggplant.


Production Method

Hand de-stemmed; native-yeast fermentation; skin contact up to five weeks; aged 28 months in 100% new French oak; not fined, cold-stabilized or filtered. Certified organic and biodynamic vineyards.
