Tasting Note
Intense dark garnet with ripe blackcurrant, blackberry, thyme, bay leaf and dark chocolate. Concentrated, plush palate with fine-grained, velvety tannins, balanced acidity and a long savory finish.

Food Pairing
Western: grilled lamb, roast beef, braised short ribs, aged cheddar. Asian: Korean BBQ, char siu (Cantonese BBQ pork), spicy Sichuan beef, miso-glazed eggplant.

Production Method
Fermented with indigenous yeasts, 4–5 weeks maceration with manual punchdowns; malolactic in French oak; aged ~22 months in new and second-use French oak.
