Tasting Note
Deep garnet with violet edges. Aromas of ripe red and dark fruit, plum, black cherry, cigar box, sweet spices and herbs. Lush, textured palate with white pepper, integrated oak, vivid/rounded tannins and a long, mineral-tinged finish.
Food Pairing
Western: grilled lamb, roast beef, steak, beef stew, hard cheeses. Asian: Korean BBQ (bulgogi/galbi), char siu/roast pork, Peking duck, miso-glazed dishes, spicy Sichuan beef.
Production Method
Grapes from organically/biodynamically managed estate; fermented with indigenous yeasts in oak vats; aged ~22 months in French barriques (c.21% new oak).
