Tasting Note
Bright lime, lemon and green apple with floral lift, wet stone and talc-like minerality. Zesty, precise acidity and a long saline finish; will gain lime-toasty honey complexity with age.

Fresh oysters, grilled trout with lemon, goat cheese, goat’s milk chèvre; Asian: Thai green curry, Vietnamese rice paper rolls, sushi and sashimi, light Korean seafood pancakes.

Production Method
Hand-harvested estate fruit; cool, temperature-controlled stainless-steel fermentation with minimal intervention and no oak to preserve purity.
