Tasting Note
Dense dark-berry profile (black cherry, blackberry, blueberry) with liquorice, dark chocolate, eucalyptus and warm spice; silky, restrained tannins, bright mineral acidity and a cool, long finish.

Western: roast lamb, côte de boeuf, braised game (wild boar), beef stews, aged cheeses. Asian: char siu or hoisin duck, Korean BBQ, miso-glazed aubergine, peppery Sichuan pork, teriyaki beef.
Production Method
Hand-harvested, destemmed; 20–30 day maceration; aged ~12 months partly in used Burgundian barrels and large foudres, then finished in stainless steel; organic/biodynamic practices, minimal sulphites.

Clau de Nell (Claude & Nelly) — biodynamic, Demeter-influenced estate in Ambillou-Château. Old vine plantings (c.55–90 years) on silty-clay, red flint and tuffeau; very low yields (~25 hl/ha).
