Tasting Note
Bright red-berry core (raspberry, cherry) with herbal/peppery spice, saline/mineral edge and a subtle meaty finish. Fresh acidity, supple low tannins and medium body make it lively and food-friendly.
Food Pairing
Western: roasted lamb chops, braised beef, charcuterie and hard cheeses; Asian: Korean BBQ (bulgogi), miso-glazed aubergine, char siu-style pork; also tapas and earthy vegetable dishes.
Production Method
Demeter-certified biodynamic viticulture; hand-harvested, destemmed, native-yeast fermentation (≈30 days), partial barrel and foudre aging then finished in stainless tanks.
Vineyard Info
Clau de Nell (Ambillou-Château) is a small biodynamic estate rescued by Anne‑Claude Leflaive and Christian Jacques in 2008; managed by Sylvain Potin, with old vines (30–100 years) on tuffeau, flint and silty-clay soils.
Delivery is typically completed within 5–7 business days from the date payment is received.
