Tasting Note
Perfumed violets over red and black berries, blackcurrant and cherry, with earthy herb, balsamic spice and subtle leather. Medium–full, silky texture, fine-grained tannins and a long, mineral-tinged finish.
Food Pairing
Western: grilled lamb, roast beef, duck breast, hearty stews, aged Gouda or Époisses. Asian: Korean BBQ, char siu, teriyaki or soy-glazed beef, Sichuan-style dishes, grilled mackerel with soy/ginger.
Production Method
Biodynamic viticulture (Demeter); hand-harvested, ~30-day maceration, spontaneous/native fermentation in 228L Burgundy barrels, ~12 months oak aging with stainless-steel finishing; minimal-intervention winemaking.
Vineyard Info
Domaine Clau de Nell (owned by the Leflaive family since 2008) farms old-vine Cabernet Franc and Cabernet Sauvignon biodynamically in Anjou, focusing on low yields and traditional cellar practices.
