Tasting Note
Bright blackcurrant and violet aromatics with cedar, black pepper and mineral notes. Silky, concentrated palate with juicy dark fruit, balanced acidity, fine crunchy tannins and a long, savory finish.

Roasted or grilled red meats (lamb, ribeye), duck confit, aged cheeses (Époisses); Asian pairings: Peking duck, char siu/roast pork, Korean BBQ, rich Szechuan beef or spiced lamb curries.
Production Method
Biodynamic viticulture; native-yeast fermentation in historic cellar. For 2016 aged ~18 months in oak barrels then ~6 months in vat; bottled April 2017.

Clau de Nell (Anne‑Claude Leflaive’s estate) farms older Cabernet vines on tuffeau limestone; Demeter-certified biodynamic practices and low yields from 45–65 year old vines.
