Tasting Note

Golden with ripe stone fruit, quince and honeyed notes, light pastry/oak spice, bright saline minerality, creamy mid‑palate and vibrant acidity; long citrus-tinged finish.

Biodynamic viticulture; hand-harvested, gentle whole-bunch pressing, native-yeast fermentation, ~12 months in used Burgundy barrels followed by time in stainless vats; aged on fine lees in troglodyte cellars.
