Tasting Note
Deep black and red fruit—blackcurrant, blackberry and cherry—lifted by violets, cedar and graphite. Firm, fine-grained tannins with dark chocolate, cassis and a mineral finish; long, structured palate.

Food Pairing
Western: grilled rib‑eye, roast lamb, beef short ribs, aged cheddar, mushroom risotto. Asian: char siu, Korean BBQ beef, hoisin duck, spicy Sichuan beef or braised beef noodles.

Production Method
Hand-picked, de-stemmed and gently crushed; cool, slow fermentation with selected yeast; pumped over during fermentation, ~14 days on skins; aged ~18 months in French oak (≈50% new) barriques.

Clairault Streicker estate in Wilyabrup, Margaret River; includes old A‑block plantings (circa 1976). Acquired/merged under John Streicker ownership; known for focused Margaret River Cabernet and Chardonnay.
