Tasting Note
Concentrated dark fruit (plum, black cherry), tapenade and Mediterranean herbs with chocolate, cedar and mineral slate notes. Full, ripe palate with firm dusty tannins and a long, savory finish.
Food Pairing
Western: roast lamb, beef stew, grilled ribeye, duck confit, aged cheeses. Asian: Korean BBQ (galbi/bulgogi), Sichuan braised beef, Cantonese char siu, hoisin-roasted duck, rich Japanese teriyaki dishes.
Production Method
Hand-harvested old-vine Cariñena; grapes destemmed/crushed, fermented separately, matured ~18 months in French oak (mostly used 225L barrels), bottled after extended cellar ageing.
Vineyard Info
Founded 1996 to recover centenary vines in Porrera; family Pérez project buying grapes from local growers on llicorella (slate) slopes, low yields and focused on traditional Priorat varieties. Annual production ~70,000 bottles.
