Tasting Note
Deep ruby Tempranillo with blackberry, black cherry, cassis, cedar, tobacco and dark chocolate; spicy clove and vanilla from French oak. Dense, structured and elegant with ripe tannins and long finish.

Food Pairing
Roast beef, lamb, game (venison), stews, aged cheeses; Asian: Peking duck, char siu, Korean BBQ (galbi), beef rendang, mushroom stir-fries with soy and hoisin.

Production Method
Hand-harvested Tempranillo, double selection, destemmed, 12-hour pre-maceration, temperature-controlled fermentation, 17 months in French (Allier) oak barrels, bottled with natural cork.

Vineyard Info
Produced by Bodegas J. Chivite (family estate since 1647). Colección 125 launched in 1985; fruit chiefly from Finca Legardeta (clay-limestone soils, Atlantic influence). Limited, numbered bottlings.
