Tasting Note
Pale yellow with green reflections. Intense nose of white stone fruit, citrus, acacia blossom, honey, toasted nuts, brioche and subtle smoke/vanilla oak. Rich, creamy palate with vibrant acidity, mineral lift and a long, spicy, slightly menthol finish.

Food Pairing
Western: grilled/roasted salmon, seafood risotto, roast chicken, creamy pasta, jamón ibérico, soft cheeses. Asian: miso-glazed fish, sushi (fatty tuna), Thai coconut curry with seafood, ginger-soy glazed prawns.

Production Method
Hand-harvested Chardonnay fermented in French oak barrels; aged ~11-12 months on lees with periodic bâtonnage, filtered and bottled after resting.

Vineyard Info
Produced by the J. Chivite family estate (historic house, origins 17th century). Colección 125 is a limited single-vineyard selection from Finca Legardeta (480 m, clay-limestone soils).
