Tasting Note
Pale salmon-pink with aromas of strawberry, raspberry, white peach and delicate floral notes. Fresh, lively acidity, creamy mid-palate, red-fruit core and citrus lift with a persistent, elegant finish.

Food Pairing
Western: salade niçoise, grilled prawns, roast chicken, light pasta, charcuterie, paella. Asian: sushi, sashimi, ceviche, ceviche-style tuna tartare, mild Thai seafood dishes, Korean-style grilled seafood.

Production Method
Traditional sangrado (bleeding) after brief skin contact; fermentation at low temperature in stainless steel; aged ~6 months on fine lees.
