Tasting Note
Blackberry and black cherry fruit with gravelly minerality, cedar, tobacco and spice; medium-full, polished tannins and a long, savory, mineral finish.

Western: roast lamb, braised short ribs, mushroom risotto. Asian: Peking duck, char siu (Cantonese BBQ pork), beef bulgogi or Korean BBQ, rich Sichuan-style beef.
Production Method
Hand-harvested and sorted; fermented in stainless, concrete and wooden vats; aged ~14 months in French oak barrels (≈33% new).
