Tasting Note

Perfumed black-fruit core (blackcurrant, blackberry, fig) with violet, bergamot, menthol, graphite, cocoa and truffle notes. Full-bodied, ultra-fine tannins, vibrant freshness and an extremely long, mineral finish.


Food Pairing

Western: roast beef or beef fillet with truffles, venison, aged hard cheeses. Asian: Peking duck, hoisin/char siu pork, Korean bulgogi, rich braised beef or umami‑forward Sichuan dishes.


Production Method

Hand-harvested; parcel vinification with selected indigenous yeasts, gentle extraction and ~4-week maceration; malolactic in vats; aged ~18 months in French oak (significant new oak).
