Tasting Note
Concentrated dark-fruited core of black cherry, blackcurrant and blueberry with leather, graphite, spice and cocoa. Silky, layered texture, ripe alcohol and integrated oak; long, savory finish with gentle Provençal herb and mineral notes.

Food Pairing
Western: roast lamb, braised beef short ribs, venison, aged hard cheeses. Asian: Korean BBQ beef, char siu pork, Sichuan beef stir‑fry, soy‑braised short ribs.

Production Method
Hand-harvested, co‑fermented (wooden tanks) with native yeasts; 3–4 week maceration, malolactic in concrete; ~12 months ageing in large casks and some new oak barrels.

Vineyard Info
Château La Nerthe, one of Châteauneuf‑du‑Pape’s oldest estates (records from 1560). Cuvée des Cadettes is from very old vines (c.85–100 years); estate is organic-certified.
