Western: roast leg of lamb, entrecôte with red-wine reduction, aged cheeses, venison. Asian: char siu or Cantonese roast pork, Korean BBQ (bulgogi/galbi), spicy Sichuan beef, braised lamb with soy and star anise.
Production Method
Estate-grown, hand-harvested; co-fermented on skins (~3 weeks) with malolactic fermentation; 12 months ageing partly in large casks and partly in new oak (≈28% new). Certified organic.
