Tasting Note
Garnet color; aromas of ripe red and black fruits with cocoa, toasted spice and subtle tobacco. Medium-bodied, fresh acidity, soft tannins and a persistent, slightly spicy finish.

Food Pairing
Western: roasted lamb, grilled steak, duck confit, charcuterie, aged cheddar. Asian: Peking duck, beef bulgogi, char siu, milder Szechuan or hoisin-glazed dishes, yakitori.

Production Method
Cold pre-fermentation maceration, controlled fermentation, aged ~6 months in large oak foudres; minimal intervention in cellar.

Historic Graves estate (records since 1630). 85ha across several plots; HVE sustainable certification. Owned by the Chatin family since 2021, focusing on terroir expression.
