Tasting Note
Pale gold Chardonnay: white flowers, citrus zest, stone fruit and subtle toasted oak. Bright acidity with saline mineral notes and a long, refined finish.

Food Pairing
Western: seared scallops, sole meunière, roast chicken with chanterelles, creamy risotto, aged Comté. Asian: sushi and maki, steamed white fish with ginger-soy, Thai green curry (milder), Vietnamese spring rolls.

Production Method
Hand-harvested fruit, whole-bunch pressing, fermentation and élevage in French oak barrels (228L), ~10 months with ~25–30% new oak.
