Pure Pinot Noir: red cherry, raspberry and wild strawberry with black-plum depth, forest-floor earthiness, baking spice and subtle smoky oak. Medium-plus body, fine silky tannins, bright acidity and a mineral, lingering finish.

Western: roast duck, herb-crusted lamb, roast beef, mushroom risotto, hard cheeses. Asian: Peking duck, char siu, bulgogi (Korean beef), teriyaki dishes, mushroom hotpot, miso-glazed aubergine.
Production Method
Hand-harvested; 100% destemmed; wild-yeast fermentation with ~19–23 day maceration; gentle punch-downs/pump-overs; aged 10–16 months in French oak (≈25–30% new).
