Tasting Note
Fresh raspberries, strawberries, pine‑needle lift and vanilla oak. Juicy, medium-bodied palate with fine silky tannins, brambly red-fruit core and a fairly long, pure finish.

Western: roast duck, lamb, mushroom risotto, pork tenderloin, soft cheeses. Asian: Peking duck, char siu, Korean BBQ, miso‑glazed salmon, shiitake mushroom hot pot, aged tofu dishes.

Production Method
Cold maceration, temperature‑controlled (thermo) fermentation with partial open ferments; malolactic in French oak; aged 14–18 months (majority in French oak, substantial new oak component).
