Tasting Note

Opaque, full-bodied Syrah: blackcurrant, candied plum, violet, licorice and smoky granite minerality. Ultra-fine chewy tannins, dark chocolate and spice, with a long, structured finish.


Food Pairing

Western: roast beef, lamb, venison, game, aged cheeses. Asian: Korean BBQ (bulgogi), Peking duck, Sichuan pepper beef, char siu, Japanese yakiniku.


Production Method

Biodynamic viticulture; hand-harvested, fully destemmed; fermented in small concrete tanks with extended maceration (4–6 weeks); matured 18–20 months in new and 1-year oak barrels.
