Medium–deep ruby. Perfumed candied red fruits, violets, rope liquorice and wakame; flavours of plums, cranberry, aniseed, tangerine pith and Christmas spice. Granular/sandy tannins, refreshing acidity and a very long, lingering finish.
Food Pairing
Western: roast lamb, charcuterie, aged cheddar, beef brisket, pork belly, pizza, BBQ ribs. Asian: char siu, Peking duck, Korean BBQ (bulgogi/galbi), spicy Sichuan beef, miso‑glazed aubergine, yakitori and teriyaki dishes.
Production Method
Single‑vineyard fruit from ungrafted 1952 bush vines; fermented with long extraction in larger vessels with gentle agitation; matured with judicious French oak influence; minimal fining/filtration.
