Tasting Note
Vivid cherry and raspberry layered with violets, licorice and soft earthy/mineral tones. Medium–full-bodied, fleshy core with fine-grained, polished tannins and a saline, floral finish.

Roast duck, beef bourguignon, mushroom risotto, grilled lamb; Asian: Peking duck, char siu pork, miso-glazed eggplant, grilled shiitake with soy and mirin.

Production Method
Hand-harvested; biodynamic viticulture; native-yeast fermentations with a high percentage of whole clusters; matured 12–18 months in mostly neutral/used oak; minimal SO2, unfined/unfiltered.
