Tasting Note
Bright cherry and dark berry fruit with violets, lavender, earth and subtle spice. Silky texture, polished tannins, fresh acidity and pronounced mineral/saline finish. Elegant, medium-bodied with a long, floral-tinged finish.

Western: roast duck, grilled lamb, mushroom risotto, coq au vin. Asian: Peking duck, miso-glazed salmon, Cantonese roast pork (char siu), mushroom hot pot or Japanese nikujaga.
Production Method
Biodynamic farming; hand-harvested, high whole-cluster spontaneous fermentations without pumps or added sulphur (typical); 14–18 months ageing in predominantly used Burgundy barrels with minimal new oak.

Historic family domaine (since 1834) run by François and Claude de Nicolay. Les Lavières is a 2.6 ha, south-facing parcel planted 1956; horse-worked, Demeter-certified biodynamic viticulture.
