Tasting Note
Perfumed red-fruited Pinot: wild strawberry, Morello cherry and redcurrant with floral notes and subtle black-pepper spice from whole-cluster. Silky, fine tannins, fresh mid-palate and a minty, elegant finish; medium-bodied and precise.
Food Pairing
Western: roast duck, coq au vin, mushroom risotto, beef bourguignon, charcuterie. Asian: Peking duck, Cantonese roast pork (char siu), soy-glazed salmon, shiitake stir-fry, mushroom and noodle dishes.
Production Method
Biodynamic viticulture; whole-berry/partial whole-cluster fermentation (~50% in 2021); vinified without pumps/sulphites; aged ~18 months in Burgundy barrels (c.10% new).

Historic family estate (since 1834) run by François and Claude de Nicolay. Aux Fournaux parcels: ~1.31 ha Premier Cru above 1.10 ha village parcel; biodynamic since 2005.
