Tasting Note
Bright red cherry, raspberry and Morello fruit with violet perfume, subtle white-pepper spice and iron-mineral notes. Earthy underpinnings, soft oak spice, medium body, fine-grained tannins and fresh acidity; moderate length with an elegant, savoury finish.

Roast duck, duck à l'orange, lamb, beef bourguignon, mushroom or truffle risotto; Asian: Peking duck, Szechuan duck or pork, miso-glazed salmon, teriyaki chicken, Korean BBQ (bulgogi).

Production Method
Biodynamic viticulture; hand-harvested, largely whole-cluster fermentation with indigenous yeasts, minimal/no added sulphites, aged 14–18 months in French oak (mostly used barrels, ~10% new); bottled unfined/unfiltered.
